  • 1 cup granulated sugar
  • 1¼ cups canned pumpkin puree

  • ½ cup chopped pecans or walnuts (for topping)
  • 3 tablespoons brown sugar (packed)
  • ¼ cup all-purpose flour (for topping)
  • ¾ teaspoon ground cinnamon (for topping)
  • ¼ teaspoon salt (for topping)
  • 2 tablespoons unsalted butter (melted, for topping)
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine chopped nuts with brown sugar, flour, cinnamon, salt, and melted butter; mix until crumbly.
  3. In another bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  4. In a separate bowl, beat eggs until frothy; then add sugar, canola oil, pumpkin puree, milk, and maple extract.
  5. Gradually fold the wet mixture into the dry ingredients until just combined.
  6. Pour half of the batter into a greased loaf pan; sprinkle half of the topping over it. Add remaining batter and top with the rest of the mixture.
  7. Bake for about 50 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a cooling rack.
