  • 8 small boneless chicken thighs
  • 2 cloves of garlic
  • 1 jalapeño pepper
  • 3 tablespoons of tomato paste
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 white onion
  • Juice of half a lime
  • A handful of fresh coriander
  • Salt and black pepper
  • Cooking oil spray

Instructions

  1. In a mini food processor, blend garlic, jalapeño, lime juice, coriander, tomato paste, cumin, paprika, salt, and pepper until smooth.
  2. Dice chicken thighs into bite-sized pieces and combine with marinade in a bowl. Cover and refrigerate for at least 4 hours or overnight.
  3. If using wooden skewers, soak them in water for at least 30 minutes. Thread the marinated chicken and vegetables onto skewers.
  4. Preheat grill or oven; cook skewers on the grill for about 15 minutes or bake at 220°C (fan 200°C) for 25-30 minutes until cooked through.
