  • 8 corn tortillas (6-inch size)
  • 1 tablespoon cooking oil
  • 1.5 cups cooked shredded chicken
  • 8 ounces salsa
  • 15 ounces black beans (rinsed and drained)
  • 2 cups shredded colby jack cheese
  • Fresh cilantro leaves for garnish
  • Tomatoes for topping

Instructions

  1. Preheat your oven to 400°F (200°C). Brush both sides of the corn tortillas with oil and arrange them in a single layer on a baking sheet. Bake for about 10 minutes until crispy.
  2. In a bowl, mix shredded chicken, canned corn, salsa, taco seasoning, and black beans until well combined.
  3. Once tortillas are crispy, remove from the oven and spoon the filling onto each tortilla. Top generously with colby jack cheese.
  4. Return to the oven for another 5 minutes to melt the cheese. Garnish with cilantro and diced tomatoes before serving.
