  • 1/2 lb radiatori pasta
  • 6 ears grilled corn (kernels cut off)
  • 3/4 cup mayonnaise
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 2 tablespoons minced garlic
  • 2 teaspoons chili powder
  • Salt and pepper to taste
  • Diced red onion and cotija cheese for garnish

Instructions

  1. Cook the radiatori pasta in salted water until al dente. Drain and rinse with cold water.
  2. Grill the corn until slightly charred, then cut off the kernels.
  3. In a large bowl, combine cooked pasta, corn kernels, mayonnaise, feta cheese, cilantro, lime juice, garlic, chili powder, salt, pepper, diced red onion, and cotija cheese. Mix gently until well combined.
