  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon (for swirl)
  • 1/2 cup granulated sugar (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla until combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and spices. Gradually add to the wet mixture until just combined.
  4. For the cinnamon swirl, mix sugar and cinnamon in a small bowl.
  5. Layer half of the batter in the prepared pan, sprinkle half of the cinnamon mixture on top. Pour remaining batter over and top with the rest of the cinnamon mixture. Swirl gently.
  6. Bake for 60–65 minutes or until a toothpick comes out clean. Let cool before slicing.
