  • 1 cup sugar
  • 1/4 cup + 2 tbsp natural unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (for ice cream layers)
  • 8 oz Cool Whip (or homemade whipped cream)
  • Strawberry and vanilla bean extracts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan.
  2. Mix flour, sugar, cocoa powder, baking soda, and salt in a bowl. Add egg, buttermilk, vegetable oil, vanilla extract, and boiling water; mix until smooth.
  3. Bake for 30–40 minutes until a toothpick comes out clean. Let cool completely.
  4. For the strawberry layer: Beat cream cheese until smooth; mix in sugar, milk, strawberry extract, and Cool Whip. Spread over cooled chocolate cake.
  5. For the vanilla layer: Beat another batch of cream cheese; combine with sugar, milk, vanilla paste/extract, and Cool Whip. Spread over the strawberry layer.
  6. Top with whipped cream made from heavy cream whipped with powdered sugar and vanilla extract. Freeze for at least four hours before serving.
