Ingredients

  • 1 salmon fillet (baked or pan-seared)
  • 1 soft-boiled egg
  • 1 cup sweet potato, cubed & roasted
  • 1 avocado, diced
  • 1 tbsp feta cheese (optional)
  • 1 tbsp roasted chickpeas
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • 2 cups mixed greens (arugula, spinach, etc.)
  • Salt and pepper to taste
  • Olive oil + lemon juice or balsamic vinaigrette (for dressing)

Instructions

  1. Boil the egg for 7 minutes; then place it in cold water. Peel and halve before serving.
  2. Season the salmon fillet with salt and pepper. Bake or pan-sear at 375°F (190°C) for about 10-12 minutes until cooked through.
  3. Toss sweet potato cubes in olive oil, season with salt and pepper, and roast at 400°F (200°C) for about 20-25 minutes until tender.
  4. Assemble the bowl starting with mixed greens as the base. Top with salmon pieces, egg halves, roasted sweet potatoes, diced avocado, cucumber slices, halved cherry tomatoes, chickpeas, and optional feta cheese. Season to taste and drizzle with dressing if desired.
