  • 1 tsp vanilla sugar or pure vanilla extract
  • 100 ml whole milk
  • 20 g unsalted butter (melted and cooled)
  • 80 g all-purpose flour
  • 1 tsp baking powder
  • Pinch of fine sea salt
  • Zest of 1 unwaxed lemon
  • 45 medium apples (about 750 g)
  • Juice of ½ fresh lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, whisk together eggs, sugar, and vanilla until fluffy. Gradually mix in milk and melted butter.
  3. In another bowl, combine flour, baking powder, salt, and lemon zest. Fold the dry ingredients into the wet mixture until just combined.
  4. Peel, core, and slice the apples; toss them with lemon juice.
  5. Pour half the batter into a greased baking dish and layer the apple slices on top. Cover with remaining batter.
  6. Bake for 30-40 minutes until golden brown; check with a toothpick for doneness.
  7. Allow to cool slightly before dusting with powdered sugar.
