  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare a greased baking sheet lined with parchment paper. Insert bamboo skewers into the apples.
  2. In a saucepan over medium heat, combine sugar, water, corn syrup, and black food coloring. Stir gently until dissolved.
  3. Stop stirring and wash down the pot sides with a wet brush to prevent crystallization. Cook until the mixture reaches 150ºC (310ºF).
  4. Dip each apple into the caramel mixture, swirling for an even coat.
  5. Place dipped apples on the greased baking sheet and let cool completely.
