  • 15 whole rectangular graham crackers
  • 1/4 cup granulated sugar
  • 8 tablespoons unsalted butter (melted)
  • 11/4 cups pumpkin puree
  • 11/2 teaspoons pumpkin pie spice
  • Three 8-ounce packages full-fat cream cheese (at room temperature)
  • 12/3 cups granulated sugar
  • 3 large eggs (at room temperature)

Instructions

  1. Preheat your oven to 350°F. Line a 9×13 baking pan with foil and lightly grease it.
  2. For the crust, crush graham crackers into fine crumbs. Mix in sugar and melted butter, then press into the bottom of the prepared pan.
  3. For the filling, beat cream cheese and sugar until smooth. Add pumpkin puree, spices, sour cream, flour, and eggs one at a time until combined.
  4. Pour half of the filling over the crust, swirl in some filling for decoration, repeat with remaining filling. Bake for about 50 minutes or until set.
  5. Cool completely before slicing into bars.
