  • 15 graham crackers
  • 1/4 cup granulated sugar
  • 8 tablespoons unsalted butter (melted)
  • 11/4 cups pumpkin puree
  • 11/2 teaspoons pumpkin pie spice
  • 3 packages (8 oz each) full-fat cream cheese (room temperature)
  • 12/3 cups granulated sugar
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F. Line a 9×13 baking pan with foil and grease it lightly.
  2. In a bowl, crush graham crackers into fine crumbs; mix in sugar and melted butter. Press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth, gradually adding sugar. Mix in pumpkin puree, spices, flour, vanilla, sour cream, salt, and eggs until combined.
  4. Pour half of the filling over the crust; swirl in remaining filling for decoration.
  5. Bake for about 50 minutes until set but slightly jiggly in the center. Allow cooling before slicing into bars.
