  • 15 whole rectangular graham crackers
  • 1/4 cup granulated sugar
  • 8 tablespoons unsalted butter (melted)
  • 11/4 cups pumpkin puree
  • 11/2 teaspoons pumpkin pie spice
  • 11/2 teaspoons ground cinnamon
  • 1 tablespoon all-purpose flour
  • Three 8-oz packages full fat cream cheese (at room temperature)
  • 12/3 cup granulated sugar
  • 11/2 teaspoons pure vanilla extract
  • 1/2 cup full fat sour cream
  • 1/8 teaspoon salt
  • 3 large eggs (at room temperature)

Instructions

  1. Preheat your oven to 350°F. Line a 9×13 baking pan with foil and grease lightly.
  2. In a bowl, mix crushed graham crackers with sugar and melted butter. Press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth, then gradually add sugar. Mix in sour cream, vanilla extract, salt, and flour until fully combined.
  4. In another bowl, combine pumpkin puree with pumpkin pie spice and cinnamon. Fold half into the cream cheese mixture and pour over the crust.
  5. Drop spoonfuls of the remaining pumpkin mixture over the cheesecake layer and swirl gently with a knife.
  6. Bake for about 50 minutes or until set. Cool completely before slicing.
