  • 1 cup canned pumpkin puree

  • ½ cup light brown sugar (packed)
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In another bowl, lightly beat the eggs and then stir in the pumpkin puree, white sugar, brown sugar, and vegetable oil until just mixed.
  4. Gently pour the wet ingredients into the dry ingredients and mix until just combined; fold in the chocolate chips.
  5. Spoon the batter into the prepared muffin tin and bake for about 16 minutes or until a toothpick inserted comes out clean.
  6. Let them cool in the tin for a few minutes before transferring to a wire rack.
