  • 1 ¼ cups pumpkin puree

  • ½ cup milk
  • 1 ¾ cups all-purpose flour

  • ½ tsp salt

  • For the Cream Cheese Swirl: 8 oz cream cheese, ¼ cup sugar, 1 egg, 1 tsp vanilla

Instructions

  1. Preheat your oven to 375°F (190°C) and line muffin pans with paper liners.
  2. In a large bowl, whisk together the oil, sugar, and vanilla; then add pumpkin puree, eggs, and milk until smooth.
  3. In another bowl, combine flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually mix into the wet ingredients until just combined.
  4. In a separate bowl, beat cream cheese and sugar until smooth; add egg and vanilla.
  5. Fill muffin cups two-thirds full with batter; spoon cream cheese filling on top and swirl gently with a knife.
