  • 1/2 cup whole wheat pastry flour
  • 2 teaspoons baking powder

  • 2/3 cup granulated sugar

  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, cinnamon, ginger, nutmeg, and cloves. Set aside.
  3. In another bowl or large measuring cup, mix pumpkin puree, milk, melted butter, and vanilla extract until well combined.
  4. Gradually blend wet ingredients into dry ingredients until just combined; do not overmix.
  5. Pour the batter into the prepared casserole dish and spread evenly.
  6. In a separate bowl, combine granulated sugar, brown sugar, and cinnamon; fold in chopped pecans.
  7. Evenly sprinkle the topping mixture over the batter and carefully pour hot water on top (do not stir).
  8. Bake in the preheated oven for approximately 40 minutes or until set.
