  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined to form the crumble mixture.
  3. Press half of the crumble mixture into the bottom of the prepared baking dish to create the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture on top and add chopped walnuts if desired.
  7. Bake for 30–35 minutes or until golden brown on top and set in the center.
  8. Allow to cool completely before slicing into squares.
