  • 1/2 cup creamy unsweetened almond butter
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until smooth.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt. Gradually add this to the wet mixture until well combined.
  4. Fold in chocolate chips and scoop out the batter onto the prepared baking sheet. Place marshmallows on top of each scoop.
  5. Bake for 10 to 12 minutes until lightly golden but still soft in the center. Allow to cool before serving.
