  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, minced garlic, celery, and diced carrot for 5 minutes until tender.
  2. Add vegetable broth and bring to a boil. Stir in rinsed quinoa, reduce heat, and simmer for 15 minutes.
  3. Mix in corn kernels and coconut milk, cooking for another 5 minutes until heated through.
  4. Season with smoked paprika, dried thyme, salt, and pepper to taste.
  5. Serve hot, garnished with chopped fresh parsley.
