  • 200 g firm tofu, pressed and shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans, cooked or canned, drained
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu, chipotle chili powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes until golden brown and crispy.
  2. Preheat your oven to 375°F (190°C).
  3. Spread tortilla chips evenly on a baking sheet. Top with cooked tofu mixture, shredded cheese, black beans, corn, tomatoes, jalapeños, and red onion.
  4. Bake for 10–12 minutes until the cheese is melted and bubbly.
  5. Remove from the oven and garnish with chopped cilantro. Serve warm with sour cream and guacamole.
