  • 2 teaspoons apple pie spice
  • ½ teaspoon salt (can omit if desired)
  • 2 cups buttermilk
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 2 tablespoons vegetable oil
  • 6 large apples (peeled, cored and finely chopped)
  • 1 cup brown sugar
  • 1 teaspoon apple pie spice
  • ½ cup water (reserve 1 tablespoon for slurry)
  • 1 tablespoon cornstarch

Instructions

  1. In a large bowl, mix flour, baking powder, apple pie spice, and salt.
  2. In another bowl, whisk together buttermilk, eggs, vanilla extract, and oil until well combined.
  3. Combine wet and dry ingredients, stirring gently until just mixed (lumps are fine).
  4. Heat a greased frying pan over medium heat; pour about ¼ cup of batter per pancake.
  5. Cook until bubbles form (about 3 minutes), flip, and cook until golden brown (another 2-3 minutes).
  6. For the apple topping: cook chopped apples with brown sugar, apple pie spice, and water until slightly softened. Thicken with cornstarch slurry.
  7. Serve pancakes stacked high with warm apple topping.
