  • 3 tbsp toasted sesame oil
  • 3.5 ounces shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp ginger
  • 4 cups chicken broth (or vegetable broth)
  • 1 can (14 oz) unsweetened coconut milk
  • 9 ounces instant ramen noodles
  • Optional toppings: boiled eggs, chili oil, sesame seeds, chives

Instructions

  1. Prepare ingredients: Grate garlic and ginger; tear shiitake mushrooms.
  2. Cook mushrooms: In a large pot, heat 1 tbsp sesame oil over medium heat. Add mushrooms and cook until browned, then season with salt and pepper.
  3. Build the broth: Add garlic and ginger to the pot with the remaining sesame oil, cooking until fragrant. Pour in chicken broth and bring to a boil.
  4. Add flavorings: Stir in turmeric, brown sugar, soy sauce, fish sauce, red curry paste, sambal oelek, coconut milk, and lime juice.
  5. Cook noodles: Once boiling again, add ramen noodles and cook for about 2 minutes until tender.
  6. Serve hot topped with crispy mushrooms and desired garnishes.
