  • 400g pasta
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeños
  • 1/2 cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • 1/2 cup mayo
  • Juice and zest of 1 lime
  • Spices: garlic, smoked paprika, chili powder, salt, and pepper

Instructions

  1. Roast the corn on a frying pan with olive oil for about 10-15 minutes until charred; then remove kernels from the cob.
  2. Cook pasta in salted water until al dente; drain and toss with olive oil.
  3. Prep remaining ingredients by slicing green onions and mincing shallot, garlic, jalapeños, and cilantro.
  4. Make the dressing by mixing sour cream, mayo, garlic, lime zest and juice, smoked paprika, chili powder, salt, and pepper in a bowl.
  5. In a large bowl, combine cooked pasta with roasted corn, green onions, shallot, jalapeño, cilantro, and cotija cheese. Pour dressing over top and mix well.
