  • ripe avocado, sliced
  • 34 cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrot slices
  • 1 tsp olive oil or butter
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Cook the Egg: Heat olive oil in a non-stick skillet over medium-low heat. Crack the egg into the skillet and cook until the whites are set, keeping the yolk runny. Season with salt and pepper.
  2. Steam the Vegetables: Fill a pot with water and place a steamer basket inside. Bring to a boil, add broccoli, cauliflower, and carrots to the basket. Cover and steam for about 4-5 minutes until tender-crisp.
  3. Plate & Serve: Arrange the sunny-side egg on a plate with avocado slices and halved tomatoes. Add the steamed veggies around them and sprinkle with extra black pepper.
