  • ½ cup butter (room temperature)
  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 cups diced & peeled apples (about 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In one bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually combine the dry mixture with the wet mixture until well incorporated. Gently fold in diced apples and nuts if desired.
  5. Pour batter into prepared pan and bake for approximately 35-40 minutes.
  6. While baking, prepare caramel sauce by combining brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  7. Once the cake is done, drizzle with caramel sauce and return to the oven for an additional 10-15 minutes.
  8. Allow cooling for about 15 minutes before serving.
