  • 5 cups chicken broth
  • 1 cup cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place quartered sweet potatoes and peeled apple on a greased baking sheet; roast for about 40 minutes until tender.
  3. Allow the roasted ingredients to cool slightly before peeling the sweet potatoes.
  4. Heat olive oil in a soup pot over medium heat; sauté chopped onion, celery, bay leaf, and carrot until tender.
