  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped – optional for extra heat; use extra jalapenos for milder)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water
  • 2 tablespoons masa harina (for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Prepare the chili paste by toasting dried peppers in a dry pan until fragrant. Soak in hot water for 20 minutes, then blend with soaking water and salt until smooth.
  2. Toss cubed beef with cumin, salt, and pepper. Brown in a pot with olive oil over medium-high heat; set aside.
  3. Sauté chopped onions and jalapeños in the same pot until softened, then add garlic.
  4. Return beef to the pot and stir in chili paste, broth, and additional seasonings. Bring to a boil.
  5. Reduce heat and simmer covered for about 2 hours until beef is tender.
