  • ½ pound turkey strips
  • 16 ounces frozen peas
  • 1 ripe pear
  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • Juice and zest of 1 lemon
  • ½ cup chopped parsley
  • Freshly ground black pepper

Instructions

  1. Prepare the pear by peeling, slicing, and dicing it. Toss in lemon juice to prevent browning.
  2. In a large skillet over medium heat, cook the turkey strips until golden brown. Remove them from the pan and set aside.
  3. In the same skillet, sauté the sliced shallots for one minute until softened, then stir in the Dijon mustard.
  4. Add the frozen peas and diced pears to the skillet, stirring for about five minutes until warmed through.
  5. Off the heat, mix in half of the cooked turkey strips along with parsley and black pepper to taste.
  6. Serve in a large bowl topped with remaining turkey strips and garnish with lemon zest.
