  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 stick cold unsalted butter
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons corn starch
  • 1 teaspoon cream of tartar
  • 1/2 stick unsalted butter (room temperature)
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1/2 cup granulated sugar (for topping)
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat the oven to 375°F.
  2. In a greased 9×13 baking dish, combine frozen peaches with sugars, vanilla extract, spices, corn starch, butter, water, and lemon juice. Mix well and bake covered for 20 minutes.
  3. For the topping, mix flour, sugars, baking powder, salt, and cinnamon in a bowl. Cut in cold butter until crumbly. Gradually add boiling water until just combined.
  4. Spoon dollops of the topping over the baked peach filling and sprinkle with additional sugar and cinnamon. Bake uncovered for another 30-45 minutes until golden brown.
