Tony’s Very Favorite Dutch Apple Pie is the ultimate comfort dessert that will leave your guests raving.   • 1 recipe for pie crust
  • 2 tablespoons butter
  • 3 ½ pounds sweet-tart apples (honeycrisp, braeburn or pink lady), peeled and cut into 1/4th inch slices (about 10 cups sliced apples)
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon nutmeg
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 tablespoon bourbon or amaretto
  • 2 teaspoons vanilla extract
  • ½ tablespoon apple cider vinegar
  • 2 tablespoons all purpose flour
  • 1 tablespoon cornstarch
  • 1 cup (120g) all-purpose flour (for the topping)
  • ½ cup (107g) packed brown sugar (for the topping)
  • ¼ cup (24g) rolled oats (for the topping)
  • ¼ teaspoon cinnamon (for the topping)
  • 6 tablespoons butter, melted (for the topping)
  • vanilla bean ice cream (for serving)

Instructions

  1. Make the pie dough ahead of time. Shape it in a pie pan, then store covered in the fridge.
  2. Melt butter in a large skillet over medium heat.
  3. Add sliced apples and stir well to coat them with butter.
  4. Sprinkle brown sugar, granulated sugar, cinnamon, allspice, and nutmeg over the apples; mix until combined.
  5. Lower heat to medium-low; cook for about 5 minutes until apples soften.
  6. Stir in bourbon, vanilla extract, apple cider vinegar, flour, and cornstarch; cook over low heat for 3–5 minutes until sauce thickens.
  7. Remove from heat; allow to cool for at least 30 minutes.
  8. Preheat your oven to 375 degrees F.
  9. In a medium bowl, mix together topping ingredients: flour, brown sugar, oats, and cinnamon.
  10. Add melted butter; stir with a fork until mixture resembles wet sand.
  11. Cover with plastic wrap; place in the fridge until ready to use.
  12. Remove pie crust from the refrigerator; place on a large baking sheet.
  13. Pour cooled apple filling into the crust.
  14. Top with Dutch crumble topping.
  15. Bake for 50–65 minutes until filling is bubbly and topping is golden brown.
  16. Allow pie to cool on a wire rack for at least 4 hours before cutting into it.
