  • 1/23/4 cup Italian dressing
  • 1/2 cup roasted red peppers (diced)
  • 1/2 yellow onion (diced)
  • 2 oz can black olives (sliced)
  • 1/2 large cucumber (peeled and diced)
  • 12 slices cooked chicken breast (chopped)
  • 10 sticks Cheddar cheese (chopped)
  • 1 cup turkey sausage sticks (sliced thin)
  • 1/4 cup grated Parmesan cheese
  • Small pie pumpkin (for serving)

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and cool slightly.
  2. While the pasta cools, prepare the vegetables and proteins by chopping as needed.
  3. In a large mixing bowl, combine the cooked pasta with prepared veggies and proteins.
  4. Pour in the Italian dressing and toss until evenly coated.
  5. Taste for seasoning, add more dressing if desired, then transfer to a serving dish or back into the pie pumpkin.
  6. Top with grated Parmesan cheese, cover, and chill in the refrigerator until ready to serve.
