  • 2 medium zucchini
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish.
  2. Slice the zucchini lengthwise and layer them in the baking dish. Sprinkle with dried oregano.
  3. Spread half of the ricotta over the zucchini, followed by half of the marinara sauce. Repeat with remaining ingredients.
  4. Top with shredded mozzarella cheese.
  5. Cover with aluminum foil and bake for 25–30 minutes, then remove foil and bake for an additional 10–15 minutes until golden brown.
  6. Allow to cool slightly before serving and garnish with fresh basil.
